Hey Kelly! They are super yummy. 🙂 I don't know about subbing coconut cream for palm shortening - it's not something I've tried. Coconut cream is quite a bit denser than the shortening, and I'm not sure it will get fluffy the same way the shortening does when you beat it. You can always give it a try, and let me know how it goes!
