Hi John - I don't think this would work how you're hoping. Because the meat is pre-cooked, it wouldn't really absorb the seasoning and flavor. Additionally, if I had to guess, I suspect that the pre-cooked patties have seasoning and things already mixed in them to hold them together. I'd recommend starting with raw ground pork for this particular recipe!

Hi Audrey - I have not tried it with beef. I imagine you could use the same seasonings. The flavor will be a bit different, as beef has a very distinct flavor all on it's own. Typically when making sausage, you want to use a mild flavored meat, such as pork, chicken, or turkey. Hope that helps!
