I made this for New Year's day and it was wonderful. My modifications were:
1. I didn't peel the apples or sweet potatoes. My immersion blender only left a few bits of the skin but we did not find it objectionable.
2. I added the spices to the onions/apples/potatoes and sauteed them for 30 seconds before adding the stock.
3. I didn't have any cayenne or Louisiana-style hot sauce at the time so we added a teaspoon or so of gochujang sauce as a garnish to each bowl. It added a hint of heat and, IMO, complemented but didn't overwhelm the other flavors.
