I'm all about a good salad dressing, and this honey lemon ginger dressing is no exception. The honey provides a touch of sweetness to counter the tanginess of the lemon and the spice of the ginger.
The end result is the perfect balance of zingy, tart and sweet.
What can I use this dressing on?
I recently made a salad with mixed greens, chicken breast, avocado, and pickled red onion. I added this honey lemon ginger dressing to it and it was salad perfection.
It's definitely too thin to use as a dip, but could be used on fresh or steamed veggies as well for a punch of flavor.
Keep in mind when you refrigerate this dressing, the olive oil will solidify when it gets cold. Just set the dressing out on the counter 10-15 minutes before you want to use it, and it will come back to room temperature and be able to be mixed.
I found storing it in a Blender Bottle was a great option - it allowed me to use the mixing ball to shake it up and bring it back together once it had warmed up a bit, then pour directly from the spout onto the salad!

Honey Ginger Salad Dressing
This honey lemon ginger dressing adds a bright and tangy kick to any salad.
Ingredients
- ½ cup olive oil
- ¼ cup lemon juice
- ¼ cup honey
- 2 Tablespoons minced ginger
- 2 Tablespoons apple cider vinegar
Instructions
- Combine all ingredients in a mason jar or cup.
- Use your immersion blender to blend all the ingredients together until smooth and combined.
- Serve!
Notes
If you don't have an immersion blender, you can use a regular blender for this dressing.
I recommend using jarred ginger, simply as a time-saver. If you prefer to use fresh ginger and grate it yourself, you can do that too!
