This spicy chorizo recipe is super simple to make - just a few spices and you're on your way! Sugar free, preservative free, but not flavor free, it packs a punch and can be used in lots of different ways.
It's hard to find ground meat without added chemicals, and especially added sugar. Once I started reading my ingredient labels, and paying attention to what was in my food, I realized I was going to have to start making my own.
In addition to this spicy chorizo, I've started making my own breakfast sausage and my own taco meat. They're all super simple to make, and incredibly versatile.
For example, I've used this chorizo on this caprese pizza, these huevos rancheros - and you could also use it instead of chicken in these burrito bowls!
This recipe is modified from the Primal Cravings cookbook, which is one of my favorites. If you buy it, my favorite recipes are the butternut squash lasagna (I seriously have dreams about this in the fall), the crispy chicken fingers, and the cuban burger. So much deliciousness in one book.
We use this chorizo as the meat in the butternut squash lasagna and it takes it to a whole other level.
I've modified this spicy chorizo recipe slightly over the years that I've been making it - not enough to make a huge difference. I cut the amount of cayenne pepper in half.
For me, the full amount makes it just a touch too spicy, where it overpowers all of the other flavors that might be going on in whatever dish you're using it in.
I also don't use onion powder - I started subbing mustard powder when my onion powder clumped up and solidified and I couldn't get it out of the jar.
Regardless, it's easy and will take you less than 10 minutes to have a pound of cooked spicy chorizo, in the fridge and on hand for any awesome recipes you might need it for!
My newest obsession is using this chorizo to make my chorizo breakfast tacos. Yum!

Spicy Chorizo
Modified from the Primal Cravings Cookbook, this is the best and quickest paleo chorizo recipe around!
Ingredients
- 1 pound ground pork
- 1 tablespoon paprika
- 1 tablespoon garlic powder
- 2 teaspoons chili powder
- 1 teaspoon mustard powder
- ½ teaspoon cinnamon
- ¼ teaspoon cayenne pepper
- 2 tablespoons apple cider vinegar
- 2 tablespoons hot sauce
- 2 teaspoons salt
Instructions
- Put the ground pork in a bowl and add all other ingredients.
- Using a fork or wearing a kitchen glove (my preferred method!) mix the seasonings into the pork until fully combined.
- Heat a skillet over medium-high heat and add the chorizo to the pan.
- Cook until pork is done and chorizo is a dark brown.

I wound up using 1/2 tsp of cayenne, but this recipe was perfect. It took all my will power not to eat it all with a fork straight out of the pan!!

Shanni, I'm so glad you loved it! I can never understand why people need to add sugar to meat - you can get the perfect flavor without it. I have a tendency to buy a few pounds of pork and turn half of it into this chorizo and half into my breakfast sausage recipe, and freeze the extra. Flavorful meat always on hand!
