Where my chicken salad fans at?!
There's this restaurant by us that has a curry chicken salad sandwich. For $1, you can have them make any sandwich a salad - they'll put the sandwich insides on top of a pile of lettuce, and BAM - Curry Chicken Salad Salad.
Their curry chicken salad is delicious. But if you're an ingredient label reader like me, or you're on Whole30, or you're starting to pay attention to what's in your food, things like chicken salad are a big, fat, question mark.
What kind of mayo are they using? (Guessing Hellmans.)
Does it have soybean oil in it? (Gross.)
Did they add sugar to the chicken salad? (Probably.)
So, in light of all of these questions, I decided to just make my own. That way, I know the ingredients, I know how it was made, and I know that I have a compliant Whole30 chicken salad.
What goes in Cashew Curry Whole30 Chicken Salad?
When you're on Whole30, you want things that are big on flavor. You're likely doing so many damned dishes that you can't see straight, and all you want out of the deal is a delicious, flavorful meal.
This Cashew Curry Whole30 Chicken Salad checks all the boxes: it's easy to make (and easy to double if you want to make more!), is easy to put on top of a pile of greens as a meal, and is loaded with flavor.
Oh, and did I mention it only has 6 ingredients?
- chicken
- mayo
- curry powder
- salt
- raisins
- cashews
Here's how to make it:
- shred chicken
- mix mayo, curry powder, and salt
- stir chicken and mayo together
- add raisins and cashews and stir
That's stupid simple, guys. And if you want to save time on the chicken cooking front, just use my method for cooking chicken breasts in the Instant Pot. You don't have to babysit them. Then when you come home, you can cool them, shred them, and throw together some chicken salad.

I served this over a mixed bowl of half baby kale and half baby spinach, but you could use any salad mix you prefer. The mayo in the chicken salad serves as enough dressing for me - if you find it too dry, I would recommend a drizzle of olive oil, or add a bit more mayo with curry powder mixed in.

This Cashew Curry Whole30 Chicken Salad has just 6 ingredients and is super simple to make. Packed with flavor, it's an easy thing to meal prep for a quick weekday lunch!
Ingredients
- 1 pound cooked chicken breast
- ¾ cup mayo
- 1 tablespoon + 1 teaspoon curry powder
- ⅓ cup rasins
- 2 tablespoon chopped cashews
- pinch of salt
Instructions
- Shred cooked chicken into small pieces.
- In a small bowl, combine mayo, curry powder and salt.
- In a large mixing bowl, combine shredded chicken and seasoned mayo and stir to coat.
- Add raisins and cashews and stir again to combine.
- Store in an airtight container in the fridge for up to a week.
