Yes, these coconut milk popsicles really just have 2 ingredients! They're easy to make, kid friendly, and the perfect healthy treat on a hot day.
We've been stuck at home for awhile now, with most things outside of our backyard closed. These two ingredient, toddler-friendly berry coconut milk popsicles have come to my rescue more than once, as both an activity and a snack!
My 2 year old son and I love to make them together, and he loves to eat them in the backyard while I work out, or sitting in his little pool, or even in the bathtub!
Some days, all you need are some overalls, a matchbox car, and a popsicle. Amiright? I only wish I could be this cool.
How to make two ingredient coconut milk popsicles
These popsicles seriously couldn't be easier. You simply combine your coconut milk and berries in a blender, pour into popsicle molds, freeze, and eat!
Kids love to help make them, and love to eat them even more. They're sugar free, dairy free, and a healthy snack you can feel good about giving them.
Health benefits of coconut milk
Coconut milk is a liquid extracted from the flesh of mature, brown coconuts. It's rich in vitamins C and E, which are well known for their antioxidant properties. It's also full of electrolytes such as potassium, magnesium and phosphorous, which exists mainly in the water in the coconut milk.
Have you ever heard of coconut water referred to as "nature's Gatorade?" There's a reason for that. Try drinking coconut water after your next tough workout, and see how you feel. It hydrates you and makes recovery easier!
Coconut milk also contains lauric acid that is known for its antiseptic properties, and aides the body in fighting infections caused by bacteria, viruses, and fungi.
A study done in The Philippines showed that children with pneumonia responded faster to treatment with antibiotics and coconut milk compared to those who were treated with antibiotics alone.
Last but not least, coconut milk is dairy free and a healthy substitute for individuals that are lactose intolerant!
Health benefits of berries
Berries contain antioxidants, which help keep free radicals under control.
Free radicals are unstable molecules that are beneficial in small amounts but can damage your cells when their numbers get too high, causing oxidative stress.
Berries can also improve your blood sugar and insulin levels. They have a much lower sugar content than other fruits. Test-tube and human studies suggest that they may protect your cells from high blood sugar levels, help increase insulin sensitivity, and reduce blood sugar and insulin response to high-carb meals.
Berries are also a good source of fiber, including soluble fiber. Studies show that consuming soluble fiber slows down the movement of food through your digestive tract, which leads to reduced hunger and increased feelings of fullness.
So what does that mean? Well, it may decrease your calorie intake and make weight management easier - if you feel fuller and have less hunger, you're likely to eat less! One study found that doubling your fiber intake could make you absorb up to 130 fewer calories per day.
The best at-home popsicle molds
With a simple popsicle mold, you can make at-home popsicles that look just like the ones you buy from the store.
This one is easy to use, and great for little hands to help with.
We also have a set of these silicone popsicle molds, which we use as well. They can contain the mess a bit more as the popsicle melts, and are great for little hands.
Make these, with or without your kids, and let me know how it goes!

Hi Jessica,
I just came across your recipe when looking for a no/low sugar fruity popsicle recipe...this looks perfect!
Can you recommend a silicone, BPA-free mold that is a larger size for adults??
Once I get a mold, I'll let you know how I like the recipe.
Thanks, Cary
Jessica
