This fruit tart glaze is quick and easy, and is made from ingredients you probably already have on hand at home.

Some fruit tart glazes use ingredients like jam or gelatin to act as the thickener. I prefer to make the sauce to the flavor I prefer, and then add the starch as the thickener.
If you're looking to keep this fruit tart glaze grain free and refined sugar free, I recommend using coconut sugar and an alternative gluten free starch such as tapioca flour or arrowroot powder. (If you're not sure about what these are, see this post on alternative flours and how to use them.)
If you're not worried about the sugar, grain, or keeping it paleo, you can use regular sugar and cornstarch to thicken.
This glaze is simple to make, but a word of caution: don't make it ahead of time and try to refrigerate it. It will turn into a gloppy mess. It needs to be slightly warm and thin to be spread over the fruit and the crust. You'll probably have leftover glaze, but it's not worth saving (see above, gloppy mess).
And no, you cannot make it ahead, refrigerate it, and then reheat it. Doesn't work. I tried.

Easy Fruit Tart Glaze
This easy fruit tart glaze has just 4 ingredients and takes less than 10 minutes to make. Suitable for any fruit tart, it adds a citrusy sweet finishing touch. Paleo and non-paleo versions included!
Ingredients
- ½ cup orange juice
- 2 Tablespoons sugar
- 1 ½ teaspoons butter
- 1 ½ teaspoons starch (see notes)
Instructions
- In a small saucepan over medium-low heat, combine the orange juice, sugar, and butter and whisk to combine. Once the sugar has dissolved, whisk in the starch and remove from heat.
- Using a pastry brush, brush the glaze over the fruit and the edge of the crust until coated and shiny.
- Place tart in fridge and chill until ready to serve!
Notes
If keeping this recipe paleo, use coconut sugar & ghee.
For the starch ingredient: If non-paleo, you can use cornstarch as the thickener. If keeping it paleo, use arrowroot powder or tapioca starch.
You will want to brush the glaze on when it is warm. You cannot refrigerate this and then try to warm it up to thicken it again, it won't work. Make it right before you're ready to brush it on the tart!
